2021 was a year with many surprises! While many of us hoped to see a return to normal, many states experienced some form of lockdown during this trying year. A return to home also saw a return to home workouts, zoom calls with loved ones, and of course – cooking at home!
Our students and graduates have shared a number of delicious and nutritious recipes with us this year. From breakfast to dessert, Endeavour College has you covered. To celebrate the end of 2021 and the incredible work from our contributors, we’ve rounded up the most popular recipes that are sure to be your favourites for years to come.
Lani is one of our Nutritionist graduates who is passionate about teenage and adolescent health. Make sure to try her super easy two ingredient oat pancakes for a quick, filling, and nutritious breakfast! Feeling creative? You can always spice it up with fresh fruit, nuts, and more.
Current Nutrition student Emma van Leenen shares her favourite fish taco recipe, perfect for balmy summer nights! With Emma’s background in catering, you can be assured this recipe will not disappoint. Make sure to try it for your next dinner party!
In an attempt to eat more vegetables, current Naturopathy student MJ Portenski Sili became a vegetarian and embarked on a journey to transform her favourite meat dishes into delicious vegetarian alternatives. One of her favourite creations is her meatless meatballs – and we can see why! Packed with veggies and flavours, they are perfect sitting on top of a pile of spaghetti with tomato sauce.
Enjoy an absolutely perfect study snack! Created by Naturopath graduate Lucinda Burgess, these bliss balls are packed with healthy fats and fibre to keep you feeling fuller for longer and to help curb those sugar cravings. Why not try them for your next 3pm pick-me-up?
Part-time Nutrition student Victoria Hogan shared this delicious orange cake recipe that would make an excellent feature to any Christmas Day feast.
